Teriyaki Jackfruit

Ingredients

1-20oz Can Jackfruit

1/2 c. Tamari Sauce

1/2 tsp Ginger Powder

5 TBS Jaggery

1/2 tsp Garlic Salt

Olive Oil

1/2 c Water


Instructions

Brown Jackfruit on high heat fast in 2 tbsp Oil.  Shred jackfruit with two forks.   Add 1/2 cup water when oil cooks off, continue to sautee and adding water as it cooks off. In separate bowl combine other ingredients.  Once Jackfruit cooks 30-40 minutes stir in sauce and simmer.  Server over Jasmine Rice.  Photo'd topped with fresh Fennel and Basil.

Jackfruit Tacos

Ingredients

1 - 20oz CAN JACKFRUIT

1 /4 c. SMALL ONION

1 sp TAMARI SAUCE

1 tsp APPLE SPICE VINEGAR

1 1/2 tsp CHIPOLTE

1 1/2 tsp CHILI POWDER

1 1/2 tsp PAPRIKA

1 1/2 tsp CINNAMON

1 1/2 tsp CACAO

2 tsp GARLIC POWDER

2 tsp ONION POWDER

1 tsp DRIED OREGANO

1/2 tsp JAGGERY

1/8 tsp CAYENNE

1/2 c. HOT WATER

ROMAINE HEARTS

AVOCADO

CILANTRO

LIME

Instructions

Sautee onions in separate pan.   Brown Jackfruit on high heat fast in 2 tbsp Oil.  Shred jackfruit with two forks.  Add 1/4 cup water and other ingredients when oil cooks off, continue to sautee 30-40 minutes and adding 1/4 water as it cooks off to keep moist.

Serve in lettuce topped with cilantro, avocado and lime.   ENJOY!

JACKFRUIT PITA

Ingredients

1-20oz CAN JACKFRUIT

1 tsp GROUND CUMIN

1/2 tsp GROUND CORIANDER

1/2 tsp GARLIC POWDER

1 tsp VINEGAR

2 TBS TAMARI SAUCE

CAYENNE TO TASTE

PEPPER TO TASTE

SALT

HUMMUS

FRESH TOMATO

PICKLED TURNIP

FENNEL

CILANTRO

Brown Jackfruit on medium high heat fast in 2 tbsp Oil.  Shred jackfruit with two forks.  Add 1/2 cup water when oil cooks off, add other ingredients, continue to sautee and adding water as it cooks off.   Spread hummus on pita topped with chopped tomato, pickled turnip, fennel, cilantro and cooked Jackfruit.  Enjoy!

 

BBQ Pulled Pork

Ingredients

1 20oz Can Jackfruit

1 small Onion

1/2 c. BBQ Sauce

1/2 tsp Garlic Powder

1/2 Onion Powder

Instructions

Sautee onions in separate pan.  Brown Jackfruit on high heat fast in 2 tbsp Oil.  Shred jackfruit with two forks.   Add 1/4 cup water when oil cooks off, Add onion powder, garlic powder, continue to sautee 30-40 minutes and adding 1/4 water as it cooks off to keep moist.  When jackfruit browned add BBQ Sauce simmer.
